Bourbon Bacon Jam

  • 1 1/2 lbs. Bacon, chopped
  • 2 sweet onions, diced
  • 2 garlic cloves, minced
  • 1/4 cup bourbon
  • 1/2 cup Blis Bourbon Barrel Maple Syrup
  • 2 Tbsp Balsamic Vinegar   
  • 1/2 cup brown sugar
  • 1 tsp black pepper
  • 1 tsp Steak Salt
  1. Place the bacon in a large pan over medium heat and cook, stirring frequently, until thee bacon is browned, about 30 minutes. Transfer bacon to a paper towel lined plate leaving 2 tablespoons of the fat in the pan.
  2. Reduce heat to medium-low and add the onions.  Sauté until caramelized, about 15-20 minutes.  Next add garlic and sauté for an additional minute.
  3. Increase heat to medium, add bourbon and scrape up any brown bits. Next add vinegar, maple syrup, brown sugar, Steak Salt & pepper.  Bring to a simmer and reduce heat.  Cook for 7-10 minutes until thickened and syrupy. 
  4. Allow to cool before serving.
