- 1 1/2 lbs. Bacon, chopped
- 2 sweet onions, diced
- 2 garlic cloves, minced
- 1/4 cup bourbon
- 1/2 cup Blis Bourbon Barrel Maple Syrup
- 2 Tbsp Balsamic Vinegar
- 1/2 cup brown sugar
- 1 tsp black pepper
- 1 tsp Steak Salt
- Place the bacon in a large pan over medium heat and cook, stirring frequently, until thee bacon is browned, about 30 minutes. Transfer bacon to a paper towel lined plate leaving 2 tablespoons of the fat in the pan.
- Reduce heat to medium-low and add the onions. Sauté until caramelized, about 15-20 minutes. Next add garlic and sauté for an additional minute.
- Increase heat to medium, add bourbon and scrape up any brown bits. Next add vinegar, maple syrup, brown sugar, Steak Salt & pepper. Bring to a simmer and reduce heat. Cook for 7-10 minutes until thickened and syrupy.
- Allow to cool before serving.
