Fontina Italian Sausages 

Ingredients 
  • 6 Hot Italian sausage links
  • 3 bell peppers- assorted colors, julienned 
  • 1  sweet onion, sliced
  • 1 tbsp Italian seasoning
  • 1 cup cherry tomatoes 
  • 1/2 teaspoon steak salt plus more to taste
  • 1 tbsp Unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 package of Fra'mani Toscano Salami or Italian dry Salami
  • 1 package Apple Smoked Fontina cheese, grated
  • Fresh Basil 
  1. Preheat grill to medium high heat and set grill up for 2 zone cooking. Meanwhile, melt butter in a sauté pan over medium heat. Add peppers & onions and season with Italian seasoning and a steak salt. Sauté until softened about 10 minutes & add garlic. Cook for an additional minute. Remove from pan and set aside. 
  2. Add olive oil to the hot pan, add tomatoes and season with steak salt. Stir after two minutes and cook an additional 2 minutes or until blistered. Remove from heat and set aside. 
  3. Using two skewers, skewer the sausage on both ends making sure they are compacted together. 
  4. Grill sausage about 10 minutes a side and move to indirect side of grill. 
  5. In this order top with salami, peppers, and cheese. Close grill and allow cheese to melt. 
  6. Remove from grill when internal temp reaches 165 degrees. Top with tomatoes & basil, slice and serve.
