Green Goddess Chicken Salad

  • 1 package Bell & Evans Boneless Skinless Chicken Breast
  • spring mix lettuce
  • 1 tomato, chopped
  • pickled red onions
  • 1/4 cup sliced almonds 
  • zest of 1 lemon
  • Steak Salt 

For the dressing:

  • 5 scallions, chopped (greens only)
  • 1/2 cup flat leaf parsley packed, stems removed
  • 1 cup basil leaves, packed
  • Juice of 1 lemon
  • 5 anchovy filets
  • 2 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1/4 teaspoon Steak Salt
  1. Season chicken with Steak Salt and cook using your desired cooking method. 
  2. In a food processer or blender, combine all the dressing ingredients and pulse until well combined.
  3. Toss the spring mix with desired amount of dressing and sliced almonds.  Top with pickled red onions, tomatoes, chicken and lemon zest.
