- 1 package Bell & Evans Boneless Skinless Chicken Breast
- spring mix lettuce
- 1 tomato, chopped
- pickled red onions
- 1/4 cup sliced almonds
- zest of 1 lemon
- Steak Salt
For the dressing:
- 5 scallions, chopped (greens only)
- 1/2 cup flat leaf parsley packed, stems removed
- 1 cup basil leaves, packed
- Juice of 1 lemon
- 5 anchovy filets
- 2 teaspoon Dijon mustard
- 1 garlic clove, minced
- 1/4 teaspoon Steak Salt
- Season chicken with Steak Salt and cook using your desired cooking method.
- In a food processer or blender, combine all the dressing ingredients and pulse until well combined.
- Toss the spring mix with desired amount of dressing and sliced almonds. Top with pickled red onions, tomatoes, chicken and lemon zest.
