- 2 lbs. ground beef
- 1/4 cup grated parmesan plus 4 tablespoons, divided
- 1/2 Tbs dried oregano
- 1/2 Tbs dried basil
- 2 garlic cloves, minced
- 1/2 cup marinara
- 8 slices provolone
- 4 brioche buns
- 1/4 cup butter, melted
- 2 cloves garlic, minced
- 1/8 tsp steak salt
- 1/2 Tbs dried parsley
- Mix ground beef, 1/4 cup parmesan, oregano, basil and garlic. Do not over mix and create 8 equal sized meatballs, set aside.
- In a small bowl combine butter, garlic, steak salt, parsley and crushed red pepper and mix well. Spread mixture on the inside surfaces of brioche buns and toast in skillet, oven or grill.
- Place a cast iron skillet or griddle on your grill or use a flat top grill. Heat grill to high heat and close the lid. Let it heat up for several minutes, until it is very hot. Alternatively, you can also make these on the stovetop; set your skillet over medium-high heat.
- Lightly oil hot pan and add the meat ball, season with steak salt and using a large spatula smash it into a thin patty. Leave undisturbed for about 2 minutes and flip and immediately add cheese. \Remove from heat after an additional minute or two.
- Top burgers with about 2 tablespoons of marinara sauce and 1 tablespoon of parmesan.
